Embracing the Wild for Festive Feasts: A Bounty of Wild Game for the Holidays
Posted by Heath Wood on Dec 5th 2023
As the holiday season approaches and the chill in the air brings thoughts of warmth and celebration, why not elevate your festive feasts with the rich, succulent flavors of wild game? After a triumphant hunting season that has left your freezers brimming with nature's bounty, it's the perfect time to introduce family and friends to the unique and delicious world of wild game cuisine.
As I enter December, I often change my outlook on deer hunting. In September, October, and November, my goal is to harvest one or two does, then spend much of my time in the stand, looking for the mature bucks I have been watching on my Stealth Cam cellular cameras. When the last month of the year arrives, I focus on putting food on the table instead of antlers. On December 2nd, 2023, my home state of Missouri began a week-long antlerless-only firearms season. This addition to the firearms season is an effort to allow hunters more opportunities to help manage Missouri’s deer herd, which is thriving in many areas. On a recent hunt, my wife and five-year-old son accompanied me in the blind to attempt to harvest a doe. After succeeding on a mature doe, my son enthusiastically stated, “She is going to taste good, isn’t she, Dad?” I guess we have raised him right.

Share Christmas Love With Wild Game Treats
After your freezers have been filled with tasty venison or other wild game from your fall hunting adventures, it is time to start sharing with your family, friends, and loved ones. Below are a few ideas to consider when sharing your harvest this Christmas season.
One could try a meal such as Roasted Elk Prime Rib for a main course option. Transform your Christmas dinner into a culinary adventure with a succulent roasted elk prime rib. The lean, tender meat of elk lends itself perfectly to slow roasting, creating a mouthwatering centerpiece for your Christmas table.
If venison is more plentiful in your freezer, try a delicious Venison Wellington. This is a more elegant twist on a classic dish; consider making Venison Wellington by encasing tender venison fillets in flaky puff pastry, complemented by sautéed mushrooms, garlic, shallots, and parsley. This dish is sure to impress your guests with its combination of sophistication and wild game excellence.
One of my favorite ways to enjoy wild game during the holiday season is by creating appealing appetizers. I have taken Venison sausage and used my Cold Steel Slockmaster knife to slice it into small pieces. Next, I wrapped it in bacon, then used a toothpick to help keep bacon secured to sausage while cooking on my pellet smoker. These tasty treats are the perfect snack for football games, game nights, and other holiday get-togethers.

Wild game appetizers don’t have to be limited to elk or venison. Another way to kick off your holiday gathering is with savory wild boar sliders. The bold flavor of wild boar pairs well with various toppings, and the sliders provide a delightful way for guests to sample the unique taste of game meat.
For upland bird hunters, a great appetizer could be something such as pheasant poppers.
This is a great way to elevate your appetizer game. These bite-sized treats feature tender pheasant wrapped in bacon and stuffed with cream cheese and jalapeños, creating a perfect blend of flavors.
Another great way to share your harvest is by giving away your tasty creations as a gift. One of my favorites is venison jerky. Prepare venison jerky for those who prefer a healthier alternative to traditional holiday snacks. High in protein and low in fat, venison jerky is a satisfying and nutritious option that anyone will enjoy. I have also created small gift baskets or Christmas-themed platters with elk sausage stuffed mushrooms to be gifted to loved ones. Stuffed mushrooms are an excellent way to combine the earthy flavors of wild mushrooms with the robust taste of elk sausage for a delightful snack. Stuffed mushrooms make for an easy-to-handle finger food that's enjoyable.

New Year's Resolution Game Plan
As the New Year approaches, consider making a resolution to incorporate more wild game into your regular diet. Over the past year, my family underwent a massive overhaul in our health awareness and fitness regimens. We shed an extensive amount of weight and helped build muscle by incorporating more venison and wild game into our diet. For a great New Year’s Resolution goal, replace some conventional meats with elk, venison, or wild boar options. Try experimenting with various recipes to find your favorite options. Additionally, explore local hunting and game markets or sources like the Mossy Oak GameKeeper Butchery to source fresh, sustainable wild game for a truly authentic experience.
Wild game is often considered a healthier option compared to conventional meats. It tends to be leaner, with lower levels of saturated fats. Additionally, wild game is rich in essential nutrients like iron, zinc, and omega-3 fatty acids. Incorporating wild game into your New Year’s fitness goals can introduce unique flavors and contribute to a balanced and nutritious diet.
This holiday season, let the spirit of adventure guide your culinary choices. Embrace the rich, distinctive flavors of wild game as you create memorable meals for your loved ones. From elegant main courses to delectable appetizers and snacks, wild game offers a versatile and nutritious alternative to traditional holiday fare. So, gather around the table and savor the unique tastes of the wild as you celebrate the joy of the season.
